Cozy Chicken Pot Pie (Eat One, Freeze One!)

Chicken pot pie has always been close to my heart—it’s one of the original Lindsay’s Kitchen recipes! Years ago, I sold frozen pies to friends and family around Christmas, helping our family cover holiday expenses. Today, I’m sharing that same recipe so you can enjoy homemade comfort food while saving time and energy in your kitchen.

Ingredients:

  • 4 cups shredded chicken (from Big Batch Chicken)
  • 1 diced onion
  • 2 diced carrots
  • 1 whole celery stalk, diced
  • 1 cup frozen peas
  • 8 Tbsp butter
  • ½ cup flour
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 ½ tsp Lindsay’s Kitchen Everything Seasoning
  • ½ tsp dried thyme
  • ½ tsp celery seed
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 bottom pie crusts + 2 tops (pie dough or puff pastry)
  • 1 egg (for egg wash)

Instructions:

  1. Preheat oven to 400°F.
  2. Melt butter in a skillet and sauté onions, carrots, and celery until softened.
  3. Sprinkle in the flour to make a roux, then add Everything Seasoning. Stir to combine.
  4. Slowly pour in chicken broth and heavy cream, letting it simmer until thick and creamy.
  5. Fill pie crusts with shredded chicken and frozen peas. Pour the creamy sauce over the filling.
  6. Top with pie crust (full top or lattice) and brush with egg wash.
  7. Bake one pie for 35–40 minutes until golden and bubbling.
  8. Wrap the second pie for the freezer. To bake from frozen, cover and bake at 375°F for 50–60 minutes, then uncover and bake an additional 20–25 minutes.
