Grilled Honey Mustard Chicken (Batch Recipe)

Ingredients:

Honey Mustard Marinade
    • 1/2 cup Dijon mustard (or yellow mustard for a milder flavor)
    • 1/4 C honey
    • 1 tablespoon mayonnaise (for creaminess – optional but recommended)
    • 1 tablespoon apple cider vinegar (or lemon juice)
    • Pinch of salt
    • Fresh ground black pepper to taste
  • 6-8 Chicken Breasts or Thighs
  • Lindsays Kitchen Ranch Seasoning

Directions:

  1. In a small bowl, whisk marinade Ingredients together until smooth and creamy.
  2. Taste and adjust: more honey for sweetness, more vinegar for tang.
  3. Pour half to 3/4th dressing over thawed chicken. Allow to marinate for at least 1 hour, preferably longer if you have the time. 
  4. Preheat Grill to 350-375
  5. Place chicken over indirect heat.
  6. Sprinkle halfway through with Lindsay’s Kitchen Ranch Seasoning, and flip. 
  7. Cover remaining side with Ranch Seasoning
  8. Grill chicken to an internal doneness of 165
  9. Remove from heat and allow chicken to rest
  10. Serve with remainder honey mustard
