Pumpkin & Pepper Jack Egg Bites

Mornings are busy—especially when the kids are back in school and everyone’s rushing out the door. That’s why I love breakfasts that are cozy, flavorful, and grab-and-go friendly. These pumpkin and pepper jack egg bites are just that.

They’re packed with protein, a little hint of pumpkin spice, and creamy cheese that melts just right. I made a double batch because let’s be honest, one batch is never enough in my house. You can eat some now and freeze the rest for a week of easy mornings.

Ingredients (makes ~12 mini egg bites, double if desired):

  • 4 large eggs
  • 1 cup egg whites
  • ½ cup pumpkin purée
  • ¼ cup plain Greek yogurt
  • ¼ cup cottage cheese
  • 1 cup cooked breakfast sausage, crumbled
  • ½ cup shredded cheese (cheddar or pepper jack)
  • 2 Tbsp Lindsay’s Kitchen Pumpkin Spice Seasoning
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper

Instructions:

  1. Preheat oven to 350°F. Grease or line muffin tins with silicone liners.
  2. In a blender or food processor, combine eggs, egg whites, pumpkin purée, Greek yogurt, cottage cheese, Pumpkin Spice Seasoning, salt, and pepper. Blend until smooth and frothy.
  3. Divide sausage and shredded cheese evenly into muffin cups.
  4. Pour blended egg mixture over the top, filling each cup about ¾ full.
  5. Bake 22–25 minutes, until the centers are set and tops are lightly golden.
  6. Cool 5 minutes before removing from tins.


Make-Ahead & Freezer Tips:

  • Store in the fridge 4–5 days, or freeze up to 2 months.
  • Reheat from fridge: 30 seconds in microwave. From frozen: 60–90 seconds.
