Pumpkin Spice Pancakes

Fall mornings just got a whole lot cozier with these Pumpkin Spice Pancakes. Using Lindsay’s Kitchen Pancake Mix, you can whip up a stack of fluffy, flavorful pancakes in no time—and customize them exactly the way your family loves.

I’ve been making flavored pancake mixes since the early days of Lindsay’s Kitchen, but I’ve learned it’s even better to give you a versatile base recipe you can tweak for the season. Pumpkin spice was a big fan favorite, so here’s how you can make them at home for breakfast, brunch, or a sweet snack.

Why You’ll Love It:

  • Quick and easy using Lindsay’s Kitchen Pancake Mix
  • Fluffy, flavorful, and customizable
  • Perfect for busy mornings or a cozy weekend brunch
  • Freezer-friendly for make-ahead convenience

Ingredients:

  • 3 cups Lindsay’s Kitchen Pancake Mix
  • 1 ½ cups water (or milk for richer pancakes)
  • 1 cup pumpkin purée
  • 2 Tbsp Lindsay’s Kitchen Pumpkin Spice Seasoning
  • 2 Tbsp brown sugar or maple syrup (optional)
  • Butter or oil, for cooking

Instructions:

  1. In a large bowl, mix pancake mix, water (or milk), pumpkin purée, Pumpkin Spice Seasoning, and optional sweetener until smooth.
  2. Heat a greased griddle or skillet over medium heat. Pour ¼ cup portions of batter onto the griddle. Cook until bubbles form on the surface, then flip and cook 2 more minutes.
  3. Serve warm with butter, maple syrup, or a dusting of Cinnamon Roll Seasoning for extra flavor.
  4. To freeze: let pancakes cool, stack them with parchment paper in between, store in freezer bags. Reheat in a toaster or oven.

Tips & Tricks:

  • Swap pumpkin for sweet potato purée for a twist on flavor and nutrients.
  • Add chocolate chips or pecans to the batter for a fun variation.
  • Use your favorite maple syrup or a drizzle of honey for extra sweetness.

These Pumpkin Spice Pancakes are a perfect mix of convenience, flavor, and fall vibes. Using Lindsay’s Kitchen Pancake Mix and Pumpkin Spice Seasoning makes it easy to enjoy homemade pancakes any day of the week—whether it’s a busy morning or a leisurely weekend breakfast.
